Meet the Team

Mike Bishop Co-Owner & Co-Founder Craftek Beverages

Mike Bishop brings a strong background in business development, operations, and beverage manufacturing to the Craftek team. After earning his B.S. in Finance from the University of South Florida, Mike began his career in financial services, where he built a reputation for trust, clear communication, and strong client relationships.

In 2012, Mike founded the first brewery in Pasco County, leading its growth into an award-winning operation that produced some of Florida’s top-rated beers and employed more than 50 people. His role included overseeing production, managing operations, and guiding the company through rapid expansion. During this time, he also earned his Brewing Sciences degree from the Siebel Institute, strengthening his technical foundation in beverage manufacturing.

After selling his ownership in 2019, Mike continued supporting the industry by consulting on brewery build-outs and advising emerging beverage brands. Today, he applies that experience at Craftek, where he leads business development and production strategy. Mike works closely with clients to understand their goals, plan efficient production paths, and help turn new beverage ideas into fully realized, market-ready products. His focus is on building long-term partnerships and ensuring Craftek delivers consistent, reliable results for brands at every stage of growth.

Erin D. Bishop Co-Owner & Co-Founder Craftek Beverages

Erin Bishop is the Co-Owner and Co-Founder of Craftek, a small-batch beverage production and co-packing facility that helps brands develop and scale their products. With a background in hospitality and hands-on operations, Erin keeps Craftek focused on quality, consistency, and straightforward support for every client.

She oversees client relationships and project management, working closely with brands to guide them through formulation, production planning, and each step of the process. Her practical experience across multiple beverage ventures gives her a clear understanding of what growing companies need, and she aims to make the path from idea to finished product as smooth as possible.

Joel Moore, Head of Production Craftek Beverages

With two decades of experience in the brewing industry, Joel is the driving force behind formulation and production at Craftek. His career began in a small brewpub in Omaha, where he worked every front- and back-of-house role, from bussing tables to assisting brewers with grain, cellar work, and cleaning. That early hands-on exposure led him into a full-time assistant brewer position and eventually to formal brewing education at the Siebel Institute in Chicago and Munich.

Joel went on to refine his craft in Utah, where he gained extensive experience in traditional lager brewing before relocating to Florida in 2015. Since then, he has become a respected member of the local brewing community and has built a reputation for precise, thoughtful, and innovative brewing practices.

At Craftek, Joel is the mastermind behind formulation and oversees all production operations, leading the team that brings each client’s beverage to life. He manages everything from recipe development and ingredient selection to execution on the production floor, ensuring quality, consistency, and efficiency across every batch. His technical skill, attention to detail, and steady leadership make him an essential part of guiding both new and established brands through the production process.

Gabi Sobanski, Beverage Operations Coordinator

Gabi brings a unique blend of organization, communication, and people-centered leadership to the team. After eight years of teaching middle school social studies, she developed a talent for breaking down complex ideas, guiding students through creative challenges, and helping them build confidence in their abilities. Those same skills now help her support clients as they navigate the beverage development process.

Gabi loves translating big visions into clear steps, keeping projects organized, and creating an environment where people feel empowered and informed. At our small but mighty family-run facility, she wears many hats. From guiding clients through decisions to coordinating timelines and ensuring every detail stays on track. Her background in education has become a natural foundation for helping entrepreneurs and brands bring their ideas to life, one beverage at a time.
